BBQed Scone Recipe

Ingredients:

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 teaspoon salt
- 1/3 cup sugar
- 1/2 cup cold unsalted butter
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- BBQ sauce for brushing

Instructions:

1. Preheat your BBQ grill to 200°C (approx 400°F) and clean and oil the grates well to prevent the scones from sticking. Using a BBQ mat or highly heat resistant baking sheet is also recommendable.

2. In a large bowl, mix together the flour, baking powder, salt and sugar.

3. Cut the cold butter into small pieces and add to the flour mixture. Use your fingers to work the butter into the flour until the mix resembles coarse breadcrumbs.

4. In a separate bowl, beat the egg lightly before stirring in the milk and vanilla extract.

5. Gradually add the milk mixture to the dry ingredients, mixing just until the dough comes together.

6. Turn the dough out onto a floured surface and knead gently a few times to bring it together.

7. Flatten the dough into an approximately 1 inch thick disk and cut it into 8 equal wedges.

8. Place the scones onto the preheated BBQ grill, spaced apart to allow for expansion.

9. Close the BBQ lid and cook for 10-15 minutes, or until the scones are golden brown and risen.

10. Brush the top of the scones with your favorite BBQ sauce during the last 3 minutes of cook time.

11. Once they’re done, carefully remove the scones from the grill and allow them to cool for a few minutes before serving.

Here is a step-by-step recipe for BBQed scones:

Ingredients:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 2/3 cup milk
- 1/2 teaspoon vanilla extract
- Optional toppings: jam, butter, honey, etc.

Step 1: Preheat the BBQ
- Preheat your BBQ to medium heat. Make sure the grill grates are clean and well-oiled.

Step 2: Prepare the dough
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
- Make a well in the center of the mixture, and add the milk and vanilla extract. Mix until just combined, being careful not to overmix.

Step 3: Shape the scones
- Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together.
- Pat the dough into a 1-inch thick circle.
- Use a floured biscuit cutter or a glass to cut out scones. Place them onto a baking sheet lined with parchment paper.

Step 4: BBQ the scones
- Carefully transfer the scones onto the preheated BBQ. Close the lid and cook for about 10-12 minutes, or until golden brown, flipping them halfway through.
- Keep an eye on them to prevent burning.

Step 5: Serve
- Remove the scones from the BBQ and let them cool slightly before serving.
- Serve warm with toppings like jam, butter, or honey.
