In 1924, iodine was added to salt to address a nationwide deficiency that resulted from the lack of access to dairy foods and ocean fish. The American diet has changed over the past few decades and now includes many processed foods that contain iodine. With iodine deficiencies becoming much less common, many salt manufacturers have stopped enriching their product with the micro-nutrient. The most concerning part of this recent change, is that it has received very little attention in the media. This means that a large portion of the population might still be relying on a useless product to provide them with enough iodine to stay healthy. Some nutritionists are concerned that this change will cause a rise in iodine deficient related diseases. Only time will tell, as America moves into a new era where the table salt is no longer a guaranteed source of iodine.
