Rice Cake Carbohydrate Lab Purpose: Rice cakes dissolve easily in the mouth due to enzymes in saliva. You will analyze how surface area and digestion are related. Procedure: The rice cakes were cut into five different configurations: a whole cake, halves, fourths, eighths, and sixteenths. Each cut represented another bite. The class calculated the average time it took for each student to dissolve a rice cake in the mouth.Data: The diagrams of the pieces and their measurements are located on page 3. Theaverage dissolve time has already been calculated and recorded in the chart.
