How to make apple pie from scratch

Ingredients:

- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, cold and cut into small cubes
- 1 tsp salt
- 1 tsp sugar
- 6-8 tbsp ice water
- 6-7 large apples, peeled, cored, and sliced
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp salt
- 1 tbsp lemon juice
- 2 tbsp butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tbsp sugar (for sprinkling on top)

Instructions:
1. In a large bowl, mix together the flour, salt, and sugar. Add the cold butter cubes and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
2. Gradually add in the ice water, a tablespoon at a time, until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
3. Preheat your oven to 375°F (190°C).
4. In a large bowl, toss together the sliced apples, sugar, brown sugar, cinnamon, nutmeg, allspice, salt, and lemon juice until well combined.
5. Roll out half of the chilled dough on a floured surface to fit a 9-inch pie dish. Place the rolled dough into the dish.
6. Pour the apple filling into the pie shell and dot the top with butter pieces.
7. Roll out the remaining dough and place it on top of the pie. Trim and crimp the edges as desired.
8. Cut a few slits in the top crust to allow steam to escape during baking.
9. Brush the top crust with the beaten egg and sprinkle with sugar.
10. Place the pie on a baking sheet to catch any drips and bake for about 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
11. Allow the pie to cool before serving. Serve warm with a scoop of vanilla ice cream, if desired.
