I would like to have 1 mole of Cl- ions in 500ml of water, how many grams of NaCl do I weigh out for this solution?

You will have 1 mole Cl^- if you have 1 mole NaCl (since there is 1 Cl per molecule NaCl) so weigh the molar mass NaCl, put it in 500 mL and you have it.
