Many people refer to eggs as the healthiest food on earth. This is not an exaggeration, for eggs contain many of the nutrients that we need to survive. The yolk of a single egg may contain vitamin B12, vitamin B2, vitamin A, calcium, iron, potassium, zinc, and a number of other vitamins and minerals. It contains nearly a quarter of the selenium you need in a day.
It is important to remember that if you eat an egg-white omelet, you are missing out on most of these nutrients. Egg whites contain protein, to be sure; however, it is the yolk that most of an egg's vitamins and minerals.
