It sounds like your universe includes 43 people that did not order any of the meal choices. Ignore them in all calculations, unless you are asked a question like "what % of the diners ate chicken?" Then you'd have to figure out how many ate chicken and include everyone. That would be the sum of all the people in the circles plus the outsiders (43).
