Explain why Vitamin A is classed as ‘fat soluble’, while Vitamin C is classed as ‘water soluble’.

Look at the structures shown on the sites below. Vitamin A is mostly hydrocarbon chains and will be soluble in fats(long hydrocarbon chains) while vitamin C has a number of OH groups which will make it soluble in water. Remember like dissolves like.
