The sulfate ions actually don't react with anything. When Zn metal is oxidized to Zn^2+ ions there are more Zn ions which produces a need for more sulfate ions in order to keep the charge even. When Cu^2+ come out of solution to form Cu metal at the Cu electrode there are too many sulfate ions since the number of Cu^2+ ions have been removed. So the sulfate ion migrate through the salt bridge from the extra ones available on the Cu side to the ones needed on the Zn side.
