In my bread oven, I have a clay tile in the oven above the flame which prevents a hot spot just above the flame.

Diffuser is very general term, anything that spreads heat away from a point location is a difuser. An heating duct can be a diffuser.

I doubt is anyone has written a treatse on specific types.
