explain why carrots look orange

I just cooked some white carrots yesterday. Carrots several hundred years ago were mostly purple, white, and yellow. Then a king (Wm of Orange) took the throne, and the Dutch selected out all the great carrots, and bred the orange one which we have today.

Why carrots appear orange is the high content of Beta Carotene, which is a molecule high in certain vitamin precursors, and has the characteristic of making the "orange" color (really it is a mixture of red and yellow. See http://www.foodcolor.com/beta-carotene-color
