If you are asked to find 621/59=, how do you know to quotient is greater than 10 before you actually divide?

You know that 600 divided by 60 is 10.

You know that 600 x 10 is 600,so you know that 621 divided by 59 quorum is going to be more then 10 because 621 is greater than 600.

You know that 60✖️10=600 and so you know that 621➗59 is going to be more than 10.
