With time, it is only "es" with: la una (and any combination thereof), el mediodía and la medianoche. Did you notice "las" in the question? It is PLURAL because for the other numbers it must be "son."
There is always a reason for WHY the right answer IS the right answer but if you don't understand the WHY, it will make no sense to you and you will miss it AGAIN!
