Acceptability- most countries just don't accept it.
Stability- because diamonds are not homogeneous.

Both answers are reasonable. Stability is certainly more important than acceptability.
Nearly fixed supply is another reason.
Another reason is that diamonds are cannot be adjusted and re-adjusted in size. etc.
