The gas in a soda is capped under pressure. When the pressure is released, much of the gas escapes in one swoosh. Left open to the atmosphere, more of the carbon dioxide gas which dissolved in the liquid escapes because it takes some time for it to reach equilibrium.

the second part is no, because warm liquid dissolves less gas than a cold liquid; therefore, warming it up would make the gas less soluble. Warming the bottle would keep it fissier for less time.
