    SUNDAY

This is definitely a riddle of English, not math, with very bad grammar, which I absolutely HATE.

For RPG fans, there are two similar ones with equally bad grammar/organization of language in Baldur's Gate II. The brother and sister riddle combines math with bad English to form a riddle that just completely lost me. The other puzzle on names which is found in a certain note from a quest also seems to have some problems with its design. I followed the words to solve halfway just fine, but the other half didn't make any sense even when I found out the answer.
(If anyone knows what I'm talking about, I greatly welcome an explanation.)

And yes, I agree the answer to this riddle is "Sunday".

Err... Excuse me, I mispoke. I got so wrapped up in talking about other riddles I didn't look closely at this riddle. I believe the answer is not Sunday, but "Saturday".

Let's see if my breaking down of this bad grammar riddle is correct:

"the day before tomorrow" is "today"

    which makes

"two days after" mean "the day after tomorrow"

    but

"the day BEFORE two days after" would it's actually 1 day after today---

which means what the riddle is actually saying is:

    Tomorrow is Sunday.

    Ergo, "today" is Saturday.
