Homework Help: Features: News: Cafeterias Offer Vegetarian Lunch

A growing number of school cafeterias are now offering vegetarian options to students. Grady High School in Atlanta, Georgia, now serves a separate vegetarian lunch line with items such as pasta salad, veggie eggrolls, and tofu sloppy joes. The change was brought on after vegetarian students made demands two years ago.

The vegetarian lunch line was originally designed for the school’s Vegetarian Club, but it quickly gained popularity and meat-eaters have also joined the line. The cafeteria now serves up to 400 of the school’s 1,200 students. As vegetarian student Miriam Archibong told the Associated Press, "My favorite thing was the veggie burger. It was so good."

In the past, school cafeterias have tried to offer more vegetarian options to students. In fact, over a third of high schools in the U.S. offer veggie food choices such as cheese pizza and salads. But the vegetarian-only lunch line at Grady High may be one of the first in the U.S.

High schools on the west coast are also considering vegetarian food items for their cafeterias. Sodexho Inc. is the company that provides Grady High’s food service and its vice-president, Tom Callahan, has told the Associated Press that schools in Eugene, Oregon, and in other progressive, health-conscious cities of the Pacific Northwest are beginning to look to Atlanta's example. Last year, the high school in Eugene introduced a separate vegetarian menu and it is now gaining popularity among students.

Considering that 30 percent of the nation’s children are either overweight or obese, the latest trend in school cafeterias look promising to many health officials who are concerned about what children eat.
