How do you solve these type of equations. I'm so confused!

You need as many equations as unknowns. Here yoou have 3 unknowns and two equations so no unique solution.

There are two basic ways:
1, substitution, for example say s = 100 - (c+h) and use that for ss in the next equation so
40[ 100-(c+h) ] +65 c + 2 h = 3279
now you do not have to worry about s any more

2. elimination, for example multiply the first equation by 2
2 s + 2 c + 2 h = 200
40s + 65c + 2 h = 3279

subtract and you only have s and c to worry about
