Why is it important for the substances to start at the same temperature??

What substances? What are you doing with these substances?

It doesnt matter which substances...

Just any substances, The question is asking that why is it important.

The two substances are water and dirt.

They both have a thermostat in them and they are both underneath a light lamp.

In some instances, it is important that they do not start at the same temperature. I wonder what the teacher has in mind here, unless you are measuring a rate of reaction, and temperature is a factor.

the both factors are time in minutes and temperature in celsius

I bet you are measuring temperature rise (due to thermal capacity). It is important because you are measuring temperatur increase, I think.

Yep, my guess was right. You have to start with the same temp so you can measure the heat rise in each with final temperature.
