I don't know that Eastern Europe has any more diversity than other regions.
Well if you look at its geographical location does it seem like a lot of people would come there? (this is why i posted this Q, it doesnt make sense)
But a lot of people came to western and southern Europe as well. They came by sea and from other regions by land.
Your book may explain the diversity in eastern Europe.
Does it have to do with the Mongols and the influx from the Byzantine Empire?
Yes it does have to do with the Byzantine Empire because thats what we are studying right now...
