They could fingerpaint, trying to make the letter E.
These activities might not work with the youngest children.
Btw -- a lot is two words.

I was thinking about doing some kind of envelope activity that is connected to the mailman... since our theme for this week is community... do u have any other ideas that connects to a community theme
How about a trip to a fire department to look at the ENGINE?
They might also talk to an EMT.
