are the nouns in the following sentence, toppings, pepperoni, Italian, sausage, black, olives, green, peppers, onions, mushrooms or would I leave out the colors (I think they're adjectives)

In that sentence, *Italian, black, green* are all adjectives. Remove those, and you have identified the nouns correctly.
