are the nouns in the following sentence, toppings, pepperoni, Italian, sausage, black, olives, green, peppers, onions, mushrooms or would I leave out the colors (I think they're adjectives)
She always ordered extra toppings, like pepperoni, Italian sausage, black olives, green peppers, onions and mushrooms.

In that sentence, Italian, black, green are all adjectives. Remove those, and you have identified the nouns correctly.
