Total energy is conserved. This is a consequence of the fact that the laws of physics don't change over time.

The relation with entropy depends on the system. Entropy can be defined as the amount of information you would need to describe the exact state of a system.

Consider the ultimate hard drive: Information is stored at the atomic level in some meterial. Suppose we exploit every physical degree of freedom of the material. Then how many bytes could we possibly store if the pressure, volume and total energy are given? That is the entropy of the material.
