Three boxes are labeled peaches, apples, and peaches & apples. Each box is labeled incorrectly. You may select only one piece of fruit from one box. How can you do this so that you can label the boxes correctly?

Note that each label is incorrect.

So, you know apples is NOT apples, but either peaches, or peaches and apples, and so on.

So, why not select the peaches and apple box. Draw the fruit. If it is a peach, then you know the peach box is apple, or apple/peach.

labeled really is

apple/peach peach

peach apple or apple/peach

apple hmmm, cant be peach, or apple, so it is apple/peach

Try this for different combos, it works.
